Apricot Cornmeal & Sage Cookeys

1 stick butter
¾ cup sugar
1L egg
¾ c + 2 Tablespoon flour
½ teaspoon baking soda
1/4c dried apricots, finely diced
2T chopped fresh sage
½ cup cornmeal
½ teaspoon salt

•        Pre-heat oven to 350.
•        Combine butter, sugar and egg.
•        Add dry ingredients
•        Drop by Tablespoonful on lightly greased cookey sheet.
•        Bake 10 minutes.
